Phelps,
I notice the spell list for Sorcerers seems to be shorter than the one for Wizards, but not by much.
Is there a particular type(s) of spells that were taken out, or is it kind of random?

I am not sure, I haven't compared them closely. My guess would be either ones that require lots of preparation to cast (say a 10 minute casting time) or that can only be used as a ritual or some such thing. Seems unlikely that they would do it a random.

When you receive a skill proficiency from your race or class, does that mean filling in the little circle next to the skill on the character sheet?

That is what is normally done. The mechanic affect is that you add your proficiency bonus to the ability modifier and anything else to the d20 role. You should probably indicate what skill you have proficiency in so that when the math is checked it all makes sense.
